Drew’s Famous Guacamole

Ingredients

6 Ripe Avocados
½ Pint Grape Tomatoes
Red Onion
1 Small Bunch Cilantro
1 Lime
1 tbsp Pink Himalayan Salt

Directions

Slice avocado in half and remove the pit. Using a metal spoon, scoop out the inside of the avocado into a medium sized bowl. Repeat for all avocados.

Next, halve or quarter the grape tomatoes (depending on you liking) and add to the avocado in the bowl.

Slice red onion in half, then half a again. finely chop and add to bowl. Cut off stem end of cilantro and roughly chop. Drew suggests using a whole small bunch of cilantro or half if using a larger bunch.

Cut lime into quarters and squeeze juice into the bowl. Using a potato masher, mash all ingredients together.

Last, add salt to your liking and enjoy!

Spicy Watermelon Hummus

Ingredients

1 large garlic clove
2 tbsp diced red onion
¼ cup chopped fresh parsley
cup watermelon juice (liquefy watermelon in a blender)
1 tbsp extra virgin olive oil
1 ½ tbsp lemon juice
½ tsp lemon peel
¼ tsp ground cumin, coriander, ground ginger, paprika, and turmeric
15 ounce can chickpeas (garbanzo beans), drained and washed
Salt & pepper, to taste
¼ cup diced watermelon
parsley sprigs

Directions

Mince garlic in a food processor. Add onion and parsley and blend until fully minced. Add rest of ingredients and blend until smooth.

Refrigerate for at least half an hour to allow flavors to blend. Garnish with diced watermelon and parsley sprigs. Serve with pita bread, baked chips, or baby carrots.

Ingredients

2 cups diced watermelon
3 cups kale, chopped fine
2 cups peeled and diced English cucumber
½ cup diced red onion
½ cup Kalamata olives, cut in halves
4 tbsp extra-virgin olive oil
2 tbsp balsamic vinegar
1 tsp minced garlic
1 tbsp chopped fresh mint
grated pepper, to taste
½ cup crumbled feta cheese

Directions

In a large bowl, add kale, watermelon, cucumber, onion and olives.

In a small bowl, whisk oil, vinegar, garlic, mint and pepper.

Pour dressing over salad and toss thoroughly. Top with feta cheese. Serve.

Ingredients

1 watermelon, washed and cut into chunks.

Directions

Blend 2-3 cups watermelon at a time until smooth.

Strain into serving pitcher (optional).

Note: If you decide not to strain, juice will need to be stirred until blended prior to serving.

Ingredients

3 cups small cubes of watermelon
6 oz baby spinach leaves, cut into strips
3 cups shredded carrots
1 cup Japanese-style ginger dressing
1 cup toasted sliced almonds

Directions

In an 8 x 11 inch serving dish, layer the spinach on the bottom, then the carrots and the watermelon on top.

Pour the dressing over the top and sprinkle with almonds.

Serve immediately.
